A timeless and authentic pimento cheese recipe, featuring sharp cheddar, creamy mayo, and sweet pimentos. Perfect for spreading, dipping, or enjoying straight from the bowl.

  • Total Time: 15 minutes
  • Yield: 2 cups (approximately 8 servings) 1x

Ingredients

Scale

8 ounces extra-sharp cheddar cheese, grated
4 ounces mild cheddar cheese, grated
4 ounces cream cheese, softened
1/2 cup mayonnaise (Duke's or Hellmann's recommended)
4 ounces diced pimentos, drained well
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper (optional, for a slight kick)
Salt and freshly ground black pepper to taste

Instructions

Step 1: In a large mixing bowl, combine the grated extra-sharp cheddar cheese and mild cheddar cheese. If you have a food processor, you can pulse the cheese briefly for a finer texture, but hand-grating is perfectly fine.
Step 2: Add the softened cream cheese and mayonnaise to the bowl with the grated cheese. It's important for the cream cheese to be soft to ensure a smooth mixture.
Step 3: Add the drained diced pimentos, garlic powder, onion powder, and cayenne pepper (if using) to the bowl. Ensure the pimentos are very well drained to prevent a watery pimento cheese recipe.
Step 4: Using a sturdy spoon, spatula, or even your hands (wearing gloves is recommended!), mix all the ingredients thoroughly until well combined and creamy. Some people prefer a chunkier pimento cheese recipe, others smoother. Adjust to your preference.
Step 5: Season the pimento cheese recipe with salt and freshly ground black pepper to taste. Start with a pinch of each and adjust as needed. Remember, cheese can be salty, so taste before adding too much.
Step 6: For the best flavor, cover the bowl and refrigerate the pimento cheese recipe for at least 1 hour before serving. This allows the flavors to meld beautifully. You can store it in an airtight container for up to 5-7 days. I often use these Basics Glass Food Storage containers for easy storage and serving.

Notes

For the best texture and flavor, use block cheese and grate it yourself; pre-shredded cheese often contains anti-caking agents that can alter the consistency. Don't be afraid to adjust the cayenne for your preferred level of spice. This pimento cheese recipe gets even better the next day!
