1 tablespoon olive oil
1 pound lean ground beef (85/15 or 90/10)
1 medium yellow onion, chopped
3 cloves garlic, minced
1 small head green cabbage (about 2 pounds), cored and shredded or roughly chopped
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup beef broth
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Fresh parsley, chopped, for garnish (optional)
Instructions
Step 1: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
Step 2: Add chopped onion and minced garlic to the skillet with the beef. Cook for 3-5 minutes, until the onion is softened and translucent and the garlic is fragrant.
Step 3: Stir in the shredded cabbage, diced tomatoes (undrained), beef broth, smoked paprika, dried thyme, salt, and black pepper. Bring to a simmer.
Step 4: Reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the cabbage is tender-crisp, stirring occasionally.
Step 5: Remove the lid and increase heat to medium-high. Cook for another 5-10 minutes, stirring frequently, to allow any excess liquid to evaporate and the flavors to concentrate. Taste and adjust seasonings as needed.

Notes
For an extra layer of flavor, brown the ground beef until deeply caramelized before adding other ingredients. Don't overcook the cabbage; it should be tender-crisp for the best texture.
