Ingredients
1 loaf (13-16 oz) Challah, Brioche, or French bread, day-old, cut into 1-inch cubes
8 large eggs
2 cups whole milk (or half-and-half)
1/2 cup granulated sugar
2 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp salt
For the Streusel Topping:
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup cold unsalted butter, cut into small pieces
1/2 tsp ground cinnamon
1/2 cup chopped pecans or walnuts (optional)
Maple syrup, for serving
Fresh berries, for garnish (optional)
Powdered sugar, for dusting (optional)
Instructions
Step 1: Grease a 9x13-inch baking dish with butter. Arrange the bread cubes evenly in the prepared dish.
Step 2: In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined and smooth.
Step 3: Pour the egg mixture evenly over the bread cubes in the baking dish. Gently press down on the bread with a spatula or your hands to ensure all pieces are soaked in the custard. Cover the dish with plastic wrap and refrigerate for at least 8 hours, or preferably overnight (up to 24 hours).
Step 4: The next morning, preheat your oven to 350°F (175°C).
Step 5: Prepare the streusel topping: In a medium bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter pieces. Using your fingertips, a pastry blender, or a fork, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the chopped pecans or walnuts, if using.
Step 6: Remove the french toast casserole from the refrigerator. Sprinkle the streusel topping evenly over the soaked bread.
Step 7: Bake for 45-55 minutes, or until the casserole is golden brown, puffed, and the center is set (a knife inserted into the center should come out mostly clean). If the topping starts to brown too quickly, loosely tent the casserole with aluminum foil.
Step 8: Remove from the oven and let rest for 5-10 minutes before serving. Dust with powdered sugar and serve warm with maple syrup and fresh berries, if desired.
Notes
For best results, use day-old bread. If your bread is fresh, cut it into cubes and spread it on a baking sheet; bake at 250°F (120°C) for 10-15 minutes until slightly dried out before assembling the casserole. This prevents sogginess and ensures a perfectly custardy texture. You can also customize the streusel by adding different spices like cardamom or replacing pecans with other nuts or seeds.
