Ingredients
4 boneless, skinless chicken breasts (approx. 6-8 oz each)
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic, smashed
2 sprigs fresh rosemary or thyme
1 lemon, sliced into rounds
1 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C). Use a meat mallet to pound the chicken breasts to an even thickness of about 1 inch.
Step 2: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
Step 3: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, sear the chicken for 3-5 minutes until a deep golden crust forms.
Step 4: Flip the chicken. Add the butter, smashed garlic, herbs, and lemon slices to the skillet. Baste the chicken with the melting butter for 1 minute.
Step 5: Transfer the skillet to the oven and roast for 10-12 minutes, or until the internal temperature reaches 165°F (74°C).
Step 6: Remove from the oven and transfer the chicken to a plate. Let it rest for 5-10 minutes before slicing to ensure the juices remain inside.
Notes
Always use a meat thermometer to check for doneness. 165°F is the safe internal temperature for poultry.
