Ingredients
1 (8-10 pound) bone-in fully cooked ham
1 cup packed light brown sugar
1/2 cup honey
2 tablespoons Dijon mustard
1/2 teaspoon ground cloves
1/2 cup apple juice or water
Whole cloves (optional, for garnishing)
Instructions
Step 1: Preheat your oven to 325°F (165°C). Remove the ham from its packaging and let it sit at room temperature for 1 hour.
Step 2: Score the fat on top of the ham in a diamond pattern, about 1/4 inch deep. If desired, press a whole clove into the center of each diamond.
Step 3: Place the ham in a large roasting pan, flat-side down. Pour the apple juice or water into the bottom of the pan.
Step 4: Cover the pan tightly with aluminum foil to trap moisture and bake for 15-18 minutes per pound, or until the internal temperature reaches 130°F.
Step 5: While the ham bakes, whisk together the brown sugar, honey, Dijon mustard, and ground cloves in a small bowl to create the glaze.
Step 6: Remove the ham from the oven and discard the foil. Increase the oven temperature to 400°F (200°C).
Step 7: Brush half of the glaze generously over the ham. Return it to the oven, uncovered, for 20-30 minutes, basting with the remaining glaze every 10 minutes until caramelized and the internal temperature hits 140°F.
Step 8: Remove from the oven and let the ham rest for 15-20 minutes before slicing and serving.
Notes
Always use a meat thermometer to ensure the ham is heated through without being overcooked.
