Ingredients
2 cups grated zucchini (do not squeeze out liquid)
3 large eggs
1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup vegetable oil (or other neutral oil)
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
Optional: 1 cup chocolate chips, chopped nuts, or dried fruit
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9x5-inch loaf pans, or line them with parchment paper, leaving an overhang on the longer sides.
Step 2: In a large bowl, whisk together the eggs, granulated sugar, brown sugar, and vegetable oil until well combined and smooth.
Step 3: Stir in the vanilla extract.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are fine.
Step 6: Gently fold in the grated zucchini. If using, also fold in any optional chocolate chips, nuts, or dried fruit.
Step 7: Divide the batter evenly between the two prepared loaf pans. Smooth the tops with a spatula.
Step 8: Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of a loaf comes out clean. The loaves should be golden brown and spring back lightly when touched.
Step 9: Remove the loaves from the oven and let them cool in their pans for about 10-15 minutes.
Step 10: Carefully lift the loaves out of their pans and transfer them to a wire rack to cool completely before slicing. This zuchinis bread recipe is best when fully cooled.
Notes
For best results, do not squeeze the moisture out of the grated zucchini; it contributes significantly to the bread's moist texture. Store leftovers wrapped tightly at room temperature for up to 3 days, or in the refrigerator for up to a week. Zucchini bread freezes beautifully for up to 3 months.
