Ingredients
1.5 cups all-purpose flour
0.5 teaspoon baking soda
0.5 teaspoon baking powder
0.5 teaspoon salt
1.5 teaspoons ground cinnamon
0.25 teaspoon ground nutmeg
0.5 cup vegetable oil
0.5 cup granulated sugar
0.5 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1.5 cups grated zucchini (about 1 medium)
0.5 cup chopped walnuts (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan thoroughly with butter or non-stick spray.
Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
Step 3: In a large bowl, beat the egg with the oil, granulated sugar, brown sugar, and vanilla extract until the mixture is smooth and creamy.
Step 4: Stir the grated zucchini into the wet ingredients until evenly distributed.
Step 5: Gently fold the dry flour mixture into the wet ingredients, being careful not to overmix; stop as soon as no streaks of flour remain.
Step 6: If using walnuts, fold them in now. Pour the batter into the prepared loaf pan and smooth the top.
Step 7: Bake for 55 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Step 8: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Do not peel the zucchini. The skin adds color and moisture. For a gluten-free version, use a 1:1 gluten-free baking flour.
