1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/2 teaspoon salt, divided
1/2 cup shredded mozzarella cheese, plus extra for topping
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Step 2: Wash the zucchinis and cut them in half lengthwise. Using a spoon, carefully scoop out the pulp, leaving about 1/4 to 1/2 inch of flesh around the edges to form the 'boats'. Reserve the pulp.
Step 3: Place the hollowed zucchini halves in the prepared baking dish. Sprinkle the insides lightly with a pinch of salt.
