Ingredients
1/2 cup granulated sugar
1/2 cup water
1/4 cup honey or maple syrup
1/2 cup yuzu juice or concentrate (100% pure)
4-5 cups sparkling water or club soda, chilled
Ice cubes
Fresh yuzu slices, lemon slices, or mint sprigs for garnish
Instructions
Step 1: In a small saucepan, combine the granulated sugar, water, and honey (or maple syrup). Heat over medium heat, stirring constantly, until the sugar and honey are completely dissolved. Do not boil.
Step 2: Remove the saucepan from the heat and let the syrup cool completely. Once cooled, stir in the yuzu juice or concentrate. Taste and adjust sweetness if desired. If using yuzu zest, add it now and let it steep for 30 minutes before straining, then store the syrup in an airtight container in the refrigerator for up to 2 weeks.
Step 3: To assemble each elixir, fill a tall glass generously with ice cubes.
Step 4: Pour 2-3 tablespoons of the prepared yuzu syrup into the glass. Adjust the amount according to your preferred sweetness and tartness.
Step 5: Top the glass with approximately 1 cup of chilled sparkling water or club soda. Stir gently to combine the syrup and sparkling water, being careful not to lose too much carbonation.
Step 6: Garnish with a thin slice of fresh yuzu, lemon, or a sprig of fresh mint. Serve immediately and enjoy the vibrant, refreshing flavors.
Notes
For an extra fragrant syrup, add a strip of yuzu peel to the simple syrup while it cools, then remove before adding yuzu juice. The syrup can also be used as a base for cocktails or mocktails.
