Ingredients
1 bottle (750ml) dry white wine (Pinot Grigio or Sauvignon Blanc)
1/2 cup brandy or orange liqueur
2 tablespoons sugar or simple syrup
1 peach, sliced
1 green apple, cored and sliced
1 lemon, thinly sliced
1/2 cup fresh raspberries or strawberries
1 cup club soda or ginger ale (optional, for fizz)
Fresh mint sprigs for garnish
Instructions
Step 1: In a large pitcher, combine the sliced peach, green apple, lemon, and berries.
Step 2: Pour in the brandy (or orange liqueur) and the sugar/simple syrup. Stir gently and let sit for 15 minutes to macerate the fruit.
Step 3: Add the bottle of white wine and stir until the sweetener is fully dissolved.
Step 4: Cover the pitcher and refrigerate for at least 4 hours, or ideally overnight, to let the flavors meld.
Step 5: Just before serving, stir in the club soda or ginger ale if you prefer a bit of sparkle.
Step 6: Serve in wine glasses over plenty of ice, ensuring each glass gets some of the soaked fruit and a sprig of fresh mint.
Notes
Always use chilled wine to start the process, and never add ice directly to the pitcher as it will dilute the flavor over time.
