Ingredients
4 cups seedless watermelon, cubed (freeze 2 cups for best texture)
1 tablespoon fresh lime juice
1/2 cup coconut water or plain water
1 teaspoon honey or agave nectar (optional)
Fresh mint leaves for garnish
Instructions
Step 1: Prepare the watermelon by cutting it into cubes. For the best consistency, freeze 2 cups of the cubes for at least 2 hours prior to making the smoothie.
Step 2: Place the fresh (non-frozen) watermelon cubes and coconut water into the blender base.
Step 3: Add the frozen watermelon cubes, lime juice, and optional sweetener to the blender.
Step 4: Blend on high speed until the mixture is completely smooth and frothy.
Step 5: Pour into chilled glasses and garnish with a sprig of fresh mint. Serve immediately.
Notes
Using frozen watermelon chunks instead of ice prevents the smoothie from becoming watery.
