Ingredients

8 cups cubed seedless watermelon (about 1 medium watermelon)
4 ounces (about 1 cup) crumbled feta cheese
1/4 cup fresh mint leaves, roughly chopped or chiffonade
2 tablespoons fresh lime juice (from 1-2 limes)
1 tablespoon extra virgin olive oil
Pinch of sea salt
Pinch of black pepper

Instructions

Step 1: Prepare the Watermelon. Cut your seedless watermelon into bite-sized cubes, approximately 1-inch in size. Place the cubed watermelon into a large mixing or serving bowl.
Step 2: Prepare the Dressing. In a small bowl, whisk together the fresh lime juice, extra virgin olive oil, a pinch of sea salt, and a pinch of black pepper until well combined.
Step 3: Combine Watermelon and Dressing. Pour about half of the prepared lime dressing over the cubed watermelon in the large bowl. Gently toss to coat the watermelon pieces evenly.
Step 4: Add Feta and Mint. Crumble the feta cheese directly over the dressed watermelon. Sprinkle the fresh mint leaves generously over the top of the salad.
Step 5: Gently Toss and Serve. Gently toss the salad once more to distribute the feta and mint throughout, being careful not to crush the delicate watermelon. Taste and add more dressing, salt, or pepper if desired. Serve immediately for the best flavor and texture.

Notes

For the best results, use a high-quality block of feta cheese and crumble it yourself. Serve this salad immediately after assembling for optimal freshness, as watermelon can release a lot of water over time.
