Ingredients
7 cups cubed seedless watermelon (about 1 small or 1/2 large watermelon)
4 oz (about 1 cup) crumbled feta cheese
1/4 cup fresh mint leaves, finely chopped
1 large lime, zested and juiced
Pinch of salt (optional, to enhance sweetness)
Instructions
Step 1: Cut the seedless watermelon into 1-inch bite-sized cubes. Place them in a large mixing bowl.
Step 2: Wash and thoroughly dry the fresh mint leaves. Stack them and finely chop them into delicate ribbons (chiffonade) or small pieces.
Step 3: If using a block of feta, gently crumble it into small, irregular pieces. Add the crumbled feta to the bowl with the watermelon.
Step 4: Zest half of the lime directly over the watermelon mixture in the bowl. Then, cut the entire lime in half and squeeze its juice over the watermelon, feta, and mint.
Step 5: Add the chopped fresh mint to the bowl with the watermelon, feta, and lime juice/zest.
Step 6: Using a large spoon or your hands, gently toss all the ingredients together until they are evenly combined. Be careful not to mash the delicate watermelon cubes.
Step 7: Taste the salad and, if desired, add a tiny pinch of salt to further enhance the sweetness of the watermelon. Serve immediately for optimal freshness and flavor. If making ahead, store watermelon and dressing components separately and combine just before serving.
Notes
For the best flavor, use a ripe, juicy watermelon and fresh, quality feta cheese. This salad is best served immediately, but leftovers can be stored in an airtight container for up to 1 day; the watermelon may become slightly watery.
