Ingredients
8 cups chopped seedless watermelon (about 1/2 a medium watermelon)
1-2 tablespoons fresh lime juice (optional, to taste)
A few fresh mint leaves (optional, for garnish or blending)
Instructions
Step 1: Wash the watermelon thoroughly. Cut it into quarters, then remove the rind and chop the flesh into approximately 1-inch chunks, removing any large seeds if present.
Step 2: Place the watermelon chunks into a high-speed blender. Add the optional lime juice and mint leaves if desired.
Step 3: Blend on high speed until completely smooth and liquefied, about 30-60 seconds. Do not add water, as the watermelon contains plenty of liquid.
Step 4: For a smoother juice, pour the blended watermelon through a fine-mesh sieve or a cheesecloth-lined colander into a pitcher, pressing on the solids with a spoon to extract all the liquid. Discard the pulp.
Step 5: Chill the watermelon juice in the refrigerator for at least 30 minutes, or until thoroughly cold. This enhances the refreshing quality.
Step 6: Serve the ice-cold watermelon juice over ice, garnished with a fresh lime wedge or a sprig of mint. Enjoy immediately!
Notes
For the best flavor, use a perfectly ripe watermelon. If your watermelon isn't sweet enough, you can add a tiny drizzle of honey or agave nectar, but taste first! You can store the juice in an airtight container in the refrigerator for up to 3 days.
