Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 3/4 cups buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
1 teaspoon vanilla extract
Cooking spray or additional melted butter for greasing waffle iron
Instructions
Step 1: In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
Step 2: In a separate medium bowl, whisk the eggs until light and frothy. Then, whisk in the buttermilk, melted and cooled butter, and vanilla extract.
Step 3: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or whisk until just combined. The batter should still have a few lumps; do not overmix!
Step 4: Let the waffle batter rest for 5-10 minutes. While it rests, preheat your waffle iron according to the manufacturer's instructions.
Step 5: Lightly grease your preheated waffle iron with cooking spray or a brush of melted butter if your iron isn't non-stick.
Step 6: Pour or scoop approximately 1/2 to 3/4 cup of waffle batter onto the hot waffle iron (adjust amount based on your waffle iron's size). Close the lid and cook until golden brown and steam stops escaping, typically 3-5 minutes.
Step 7: Carefully remove the cooked waffle and transfer it to a wire rack. Serve immediately or keep warm in a 200°F (95°C) oven while cooking remaining waffles.
Notes
For extra crispiness, ensure your waffle iron is fully preheated and don't overcrowd it. Leftover batter can be stored in the fridge for up to 2-3 days. Cooked waffles can be frozen and reheated in a toaster or oven.
