Ingredients
1 cup frozen pineapple chunks
1/2 cup full-fat coconut milk (canned, unsweetened)
1/4 cup pineapple juice
1 tablespoon fresh lime juice
1 tablespoon granulated sugar or agave nectar (optional, to taste)
1/2 cup ice cubes
Garnish: Pineapple wedge, maraschino cherry, fresh mint sprig
Instructions
Step 1: Combine all ingredients in a blender. Add frozen pineapple chunks, full-fat coconut milk, pineapple juice, fresh lime juice, sugar (if using), and ice cubes to a high-speed blender.
Step 2: Blend until smooth. Secure the lid and blend on high speed until the mixture is completely smooth and creamy. If it’s too thick, add a tiny splash more pineapple juice or water. If it’s too thin, add a few more ice cubes or frozen pineapple chunks.
Step 3: Taste and adjust. Taste the virgin pina colada recipe and add more sugar or lime juice if desired, adjusting to your personal preference for sweetness and tartness.
Step 4: Prepare your serving glasses. Chill two tall glasses or hurricane glasses in the freezer for a few minutes before serving to keep your drink colder longer.
Step 5: Pour and garnish. Pour the blended virgin pina colada recipe into the chilled glasses.
Step 6: Serve immediately. Garnish each glass with a fresh pineapple wedge, a maraschino cherry, and a sprig of fresh mint for a truly festive touch. Enjoy your homemade tropical escape!
Notes
For an extra thick and creamy consistency, freeze your coconut milk in ice cube trays overnight before blending. This virgin pina colada recipe can also be scaled up easily for larger gatherings.
