8 oz (226g) full-fat cream cheese, softened at room temperature
1/2 cup (120g) full-fat plain Greek yogurt
1/4 cup (56g) unsalted butter
1/2 cup (100g) granulated sugar, divided
4 large eggs, separated
2 tbsp (16g) all-purpose flour, sifted
1 tbsp (8g) cornstarch, sifted
1 tsp vanilla extract
Pinch of salt (optional, for egg whites)

Instructions

Step 1: Preheat your oven to 325°F (160°C). Prepare a 6-inch (15cm) round springform pan by lining the bottom with parchment paper and greasing the sides. Wrap the bottom and sides of the pan securely with two layers of heavy-duty aluminum foil to prevent water from seeping in during the water bath. Step 2: In a large heatproof bowl, combine the room-temperature cream cheese, Greek yogurt, butter, and 1/4 cup (50g) of the granulated sugar.
