Ingredients
8 oz (225g) kataifi pastry, thawed if frozen
4 tbsp (60g) unsalted butter, melted
1 cup (240g) high-quality pistachio butter (or paste), unsweetened
1/4 cup (30g) powdered sugar
Pinch of salt
1 lb (450g) high-quality chocolate (dark, milk, or a mix), chopped
Optional: 1 tbsp crushed pistachios for garnish
Instructions
Step 1: Preheat your oven to 325°F (160°C). Gently separate the kataifi strands and place them in a large bowl. Drizzle with 4 tablespoons of melted unsalted butter and toss gently with your hands until all the strands are lightly coated. Spread the buttered kataifi in a single layer on a baking sheet. Bake for 15-20 minutes, stirring every 5-7 minutes, until golden brown and crispy. Once toasted, remove from the oven and let cool completely.
Step 2: In a medium bowl, combine the cooled, toasted kataifi with the pistachio butter (or paste), powdered sugar, and a pinch of salt. Mix thoroughly with a spatula or your hands until everything is well combined and the mixture is slightly sticky and cohesive.
Step 3: Ensure your chocolate bar molds are impeccably clean and dry. Lay them out on a flat surface, ready for the chocolate.
Step 4: (Tempering Chocolate - Seed Method): Place about two-thirds of the chopped chocolate in a heatproof bowl set over a saucepan of simmering water (a double boiler), ensuring the bowl doesn't touch the water. Stir gently until melted and reaches 115-120°F (46-49°C) for dark chocolate, or 105-110°F (40-43°C) for milk chocolate. Remove from heat and add the remaining one-third of chopped chocolate. Stir continuously until all chocolate is melted and temperature drops to 88-91°F (31-33°C) for dark chocolate, or 86-88°F (30-31°C) for milk chocolate.
Step 5: Pour a thin layer of tempered chocolate into the bottom of each mold, just enough to coat the bottom. Tap the molds gently on the counter to release any air bubbles. Let this layer set partially at room temperature for a few minutes, or briefly in the fridge (about 5 minutes).
Step 6: Carefully press the pistachio-kataifi filling into the molds, leaving a small gap around the edges and at the top for the final chocolate layer. Don't overfill! Pour the remaining tempered chocolate over the filling, ensuring it's completely covered. Gently tap the molds again to level the chocolate and remove any air bubbles. Sprinkle a few extra crushed pistachios on top if desired for garnish.
Step 7: Place the filled chocolate molds in the refrigerator for at least 30-60 minutes, or until completely firm and set. Once set, demold the chocolate bars carefully. Store in an airtight container at room temperature (if cool) or in the refrigerator.
Notes
For the best results, use high-quality ingredients, especially for the chocolate and pistachio butter. Tempering chocolate is crucial for a glossy finish and good snap, but if you're short on time, you can melt chocolate and use it without tempering for a home-style bar (it won't be as shiny or snap as well, but will still taste delicious). Store the finished bars in an airtight container.
