Ingredients
8 oz (226g) cream cheese, softened
1 cup (240g) sour cream, full-fat
1/4 cup (60g) mayonnaise, full-fat
1/2 cup fresh parsley, packed, stems removed
1/4 cup fresh chives, chopped
2 tablespoons fresh dill, chopped
1 cup fresh spinach, packed (optional, for vibrant color and added nutrients)
1 tablespoon fresh lemon juice
1 clove garlic, peeled
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Instructions
Step 1: Thoroughly wash and dry your fresh parsley, chives, dill, and spinach (if using). Roughly chop the herbs and garlic to prepare them for blending. Ensure your cream cheese is softened to room temperature for a smooth dip.
Step 2: In the bowl of a food processor, combine the softened cream cheese, sour cream, and mayonnaise. Process until the mixture is completely smooth and well combined, scraping down the sides as necessary to ensure no lumps remain.
Step 3: Add the chopped fresh parsley, chives, dill, fresh spinach (if using), lemon juice, and garlic clove to the food processor. Process until all the herbs and spinach are finely minced and fully incorporated, and the dip has achieved a beautiful, vibrant green color. Scrape down the sides of the bowl once or twice to ensure everything is evenly blended.
Step 4: Add the garlic powder, onion powder, salt, and black pepper to the dip. Pulse a few times to combine all the seasonings. Taste the pool dip and adjust the salt, pepper, or lemon juice to your preference. You want a bright, fresh, and well-balanced flavor.
Step 5: Transfer the vibrant green goddess pool dip to an airtight container. Cover it tightly and refrigerate for at least 1 hour, or preferably 2-4 hours. This chilling time allows the flavors to meld and deepen, resulting in an even more delicious and refreshing pool dip recipe. Serve chilled with your favorite dippers.
Notes
For the best flavor, make this pool dip recipe a few hours ahead of time to allow the flavors to fully meld. You can also adjust the amount of garlic and herbs to your personal taste. If you don't have fresh spinach, a touch of green food coloring can provide a vibrant hue, but spinach offers natural color and nutrients.
