3 cloves garlic, minced
1 tbsp grated fresh ginger
3 tbsp soy sauce (divided, or more to taste)
1 tbsp dark soy sauce (optional, for color and richer flavor)
1 tsp sesame oil
1 tbsp oyster sauce (optional, for extra umami)
2-3 tbsp high smoke point oil (avocado, grapeseed, or peanut oil)

Instructions

Step 1: Ensure your rice is cold and day-old. If not, cook it ahead of time and spread it on a tray to cool completely before refrigerating for at least a few hours, or overnight.
Step 2: In a medium bowl, toss the diced chicken with 1 tablespoon of soy sauce and a pinch of black pepper. Set aside.
Step 3: Whisk the eggs in a small bowl and set aside. Prepare all your vegetables, mincing garlic and ginger, dicing onion, and chopping green onions.
Step 4: In a small bowl, combine the remaining 2 tablespoons of soy sauce, dark soy sauce (if using), sesame oil, and oyster sauce (if using). Stir well and set aside.
Step 5: Preheat your Blackstone griddle to medium-high heat. Add 1 tablespoon of cooking oil to the griddle. Once shimmering, add the chicken pieces in a single layer.
