  • Total Time: 1 hour 5 minutes
  • Yield: 12 servings 1x

Ingredients

Scale

1 cup (2 sticks) unsalted butter, cold and cubed
2 cups all-purpose flour
1 cup granulated sugar, divided
1/2 cup light brown sugar, packed
1 cup old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
4 cups fresh or frozen blueberries (do not thaw if frozen)
1 tablespoon lemon juice
2 tablespoons cornstarch

Instructions

Step 1: Preheat your oven to 375°F (190°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a large bowl, whisk together the flour, 1/2 cup granulated sugar, light brown sugar, rolled oats, baking powder, and salt.
Step 3: Add the cold, cubed butter to the dry ingredients. Using a pastry blender, your fingertips, or a food processor, cut the butter into the mixture until it resembles coarse crumbs.
Step 4: Reserve about 1 cup of this crumble mixture for the topping. Press the remaining mixture evenly and firmly into the bottom of the prepared baking pan to form the crust.
Step 5: In a separate medium bowl, gently combine the blueberries, the remaining 1/2 cup granulated sugar, lemon juice, and cornstarch.
Step 6: Pour the blueberry mixture evenly over the pressed crust in the baking pan.
Step 7: Sprinkle the reserved crumble mixture evenly over the blueberry filling.
Step 8: Bake for 40-45 minutes, or until the topping is golden brown and the blueberry filling is bubbly and thickened. If the topping browns too quickly, you can lightly tent it with foil.
Step 9: Remove the pan from the oven and let the bars cool completely on a wire rack before cutting into squares. Cooling completely is crucial for the filling to set properly, ensuring clean slices. Enjoy these fantastic blueberry recipes!

Notes

For the best texture and clean cuts, allow the bars to cool completely to room temperature before slicing. You can store leftover bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. They also freeze well for up to 3 months; simply thaw at room temperature before serving. These blueberry recipes are perfect for make-ahead treats!
