Ingredients
2 slices of soft white bread
1 large ripe heirloom or beefsteak tomato
2 tablespoons high-quality mayonnaise (Duke's or Hellmann's)
Sea salt to taste
Freshly cracked black pepper to taste
Instructions
Step 1: Slice the tomato into thick, 1/2-inch rounds using a serrated knife to ensure clean cuts without squishing the fruit.
Step 2: Place the tomato slices on a paper towel and lightly sprinkle with sea salt. Let them sit for 2 minutes to draw out excess moisture and concentrate the flavor.
Step 3: Lay out the two slices of white bread and spread exactly 1 tablespoon of mayonnaise onto each slice, edge to edge.
Step 4: Place the salted tomato slices on one piece of bread, overlapping them slightly if necessary to cover the surface.
Step 5: Season the tomatoes generously with freshly cracked black pepper.
Step 6: Place the second slice of bread, mayo-side down, on top of the tomatoes. Cut diagonally and serve immediately.
Notes
Use a serrated knife for the tomatoes to keep the juices inside. For the most authentic experience, do not toast the bread!
