For English cucumbers, you can either peel them entirely, partially, or leave the skin on for extra texture and nutrients – your preference! Dice them to a similar size as your tomatoes. For the red onion, slice it as thinly as possible, or finely dice it if you prefer a milder onion flavor. Place all the prepared vegetables in a large mixing bowl.
Step 2: Finely chop your fresh dill and parsley. The aroma alone will make your kitchen smell like a summer garden! Add the chopped herbs to the bowl with the tomatoes, cucumbers, and red onion.
Step 3: In a small separate bowl, prepare your zesty dressing. Whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic (if using), salt, black pepper, and a pinch of sugar. Whisk vigorously until the dressing is well combined and slightly emulsified.
