1 cup (2 sticks) unsalted butter, softened
2 1/4 cups granulated sugar, divided
4 large eggs, room temperature
1 tablespoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup whole milk, room temperature

Instructions

Step 1: Preheat your oven to 325°F (160°C). Grease and flour a 10-12 cup Bundt pan or a 9x5 inch loaf pan.
Step 2: In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
Step 3: In a separate large bowl, using an electric mixer, cream together the softened unsalted butter and 2 cups of granulated sugar until light and fluffy, about 3-5 minutes. Scrape down the sides of the bowl as needed.
Step 4: Add the room temperature eggs one at a time, beating well after each addition. Mix until fully incorporated and the mixture is smooth.
Step 5: Stir in the vanilla extract.
Step 6: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix on low speed until just combined. Do not overmix.
Step 7: Pour the batter evenly into your prepared pan. Smooth the top with a spatula.
Step 8: Evenly sprinkle the remaining 1/4 cup of granulated sugar over the entire surface of the batter.
Step 9: Bake for 60-75 minutes (for a loaf pan) or 75-90 minutes (for a Bundt pan), or until a wooden skewer inserted into the center comes out clean.
Step 10: Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
