1 lb lean ground beef (or ground turkey/chicken)
2 tbsp taco seasoning (homemade or store-bought)
1/4 cup water
1 head romaine lettuce, shredded
1 cup cherry tomatoes, halved, or 1 large tomato, diced
1/2 cup canned corn, drained and rinsed
1/2 cup canned black beans, drained and rinsed
1/2 red onion, thinly sliced (optional)
1/2 cup shredded cheddar cheese (or Mexican blend)
1 avocado, diced
1/4 cup green onions, sliced
1 cup tortilla chips, lightly crushed
Optional toppings: sour cream, salsa, jalapeños
For the Zesty Lime Dressing:
1/2 cup plain Greek yogurt (or sour cream)
2 tbsp lime juice (freshly squeezed preferred)
1 tbsp olive oil
1 tsp taco seasoning

Instructions
Step 1: Prepare the Zesty Lime Dressing: In a small bowl, whisk together the Greek yogurt, lime juice, olive oil, taco seasoning, salt, and pepper until smooth. Taste and adjust seasonings as desired. Set aside.
Step 2: Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it's browned and no longer pink, about 6-8 minutes.
