Ingredients
2 (8-ounce) packages cream cheese, softened
1 (16-ounce) container sour cream (or plain Greek yogurt for a lighter option)
1 (1-ounce) packet taco seasoning mix
1 (15-ounce) can refried beans, warmed slightly (optional)
1 cup salsa (mild, medium, or hot), drained of excess liquid
2 cups shredded cheddar cheese, Colby Jack, or a Mexican blend
1 cup shredded lettuce (iceberg or romaine work best)
1 cup diced tomatoes, seeded and drained
1/2 cup sliced black olives
1/4 cup chopped green onions (scallions)
Optional: sliced jalapeños, fresh cilantro, crushed tortilla chips, avocado or guacamole, seasoned ground beef/turkey
Instructions
Step 1: In a large mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning. Beat with an electric mixer or whisk by hand until smooth and well combined.
Step 2: If using, spread the warmed refried beans evenly across the bottom of a large (9x13-inch or similar) serving dish.
Step 3: Carefully spread the cream cheese mixture over the refried beans (or directly onto the dish if omitting beans). Ensure an even layer from edge to edge.
Step 4: Gently spoon the drained salsa over the cream cheese layer.
Step 5: Sprinkle the shredded cheese evenly over the salsa layer.
Step 6: Evenly distribute the shredded lettuce over the cheese.
Step 7: Follow with the diced tomatoes and sliced black olives.
Step 8: Finally, sprinkle with chopped green onions. If desired, add any additional optional toppings like sliced jalapeños or fresh cilantro.
Step 9: Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the dip to firm up slightly.
Step 10: Serve chilled with your favorite tortilla chips, pita chips, or an assortment of fresh cut vegetables for dipping.
Notes
For the best flavor, make sure your cream cheese is completely softened before mixing. Draining the salsa and seeding the tomatoes are key steps to prevent a watery dip. This recipe is highly customizable – feel free to add seasoned ground beef or turkey for a heartier option, or swap sour cream for Greek yogurt for a lighter alternative. For optimal taste, chill for at least 30 minutes before serving.
