Ingredients
1 tablespoon olive oil
1 pound lean ground beef (90/10 or 93/7)
1 medium yellow onion, diced
2 cloves garlic, minced
2 large sweet potatoes, peeled and diced into 1/2-inch cubes
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional, for heat)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1.5 cups beef broth (or chicken/vegetable broth)
1/2 cup chopped fresh parsley or cilantro, for garnish
Instructions
Step 1: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Step 2: Add the diced onion to the skillet with the beef and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
Step 3: Add the diced sweet potatoes, smoked paprika, ground cumin, chili powder, cayenne pepper (if using), salt, and black pepper to the skillet. Stir well to combine all ingredients and spices.
Step 4: Pour in the beef broth. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
Step 5: Uncover the skillet and increase heat to medium. Cook for another 5-10 minutes, stirring occasionally, until any excess liquid has reduced to your desired consistency.
