1 cup crumbled Greek feta cheese (preferably from a block)
1/2 cup fresh mint leaves, torn or chiffonade
2 tablespoons extra virgin olive oil
Juice of 1 large lime
1/4 teaspoon flaky sea salt
1/4 teaspoon freshly ground black pepper
Instructions
Step 1: Cut the watermelon into 1-inch cubes, ensuring you remove any hard rinds. Place the cubes in a large chilled mixing bowl.
Step 2: In a small jar or bowl, whisk together the extra virgin olive oil and fresh lime juice until well combined.
Step 3: Gently add the crumbled feta cheese and torn mint leaves to the watermelon cubes.
Step 4: Drizzle the lime and olive oil dressing over the salad and toss very gently with your hands or a large spoon to avoid breaking the watermelon.
Step 5: Season with flaky sea salt and black pepper just before serving. Enjoy immediately while chilled.
Notes
For the best results, chill the watermelon for at least 2 hours before cubing. Always use fresh lime juice rather than bottled for that essential zing.
