Ingredients
2 large ripe peaches, sliced into thick wedges
1 ball (8oz) fresh burrata cheese
4 cups baby arugula or mixed greens
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze
1/4 cup fresh basil leaves, torn
1/4 cup toasted pecans (optional)
Salt and freshly cracked black pepper to taste
Instructions
Step 1: Preheat your outdoor grill or indoor grill pan to medium-high heat. Lightly brush the grill grates with olive oil.
Step 2: Brush the peach wedges lightly with olive oil. Place them on the grill and cook for 2-3 minutes per side until distinct grill marks appear and they soften slightly.
Step 3: In a large bowl, lightly toss the arugula with a drizzle of olive oil, salt, and pepper. Arrange the greens on a serving platter.
Step 4: Place the grilled peach wedges over the bed of greens. Carefully place the burrata ball in the center of the salad.
Step 5: Break open the burrata with a knife so the creamy center flows out. Drizzle the entire salad with balsamic glaze and scatter fresh basil and pecans over the top. Serve immediately.
Notes
Ensure the peaches are firm-ripe. If they are overripe, they will turn to mush on the grill. For an extra flavor boost, rub the peaches with a tiny bit of honey before grilling.
