Indulge in the ultimate homemade strawberry crumble, a warm and comforting dessert bursting with juicy, sweet strawberries and topped with a golden, buttery oat streusel. This easy-to-follow recipe is perfect for highlighting fresh summer berries.

  • Total Time: 1 hour
  • Yield: 6-8 servings 1x

Ingredients

Scale

2 lbs fresh strawberries, hulled and quartered
1/2 cup granulated sugar (for filling)
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup packed light brown sugar
1/4 cup granulated sugar (for topping)
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cubed

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch (or similar sized) baking dish.
Step 2: In a large bowl, combine the hulled and quartered strawberries with 1/2 cup granulated sugar, cornstarch, and lemon juice. Toss gently to coat. Pour the mixture into the prepared baking dish.
Step 3: In a separate medium bowl, whisk together the all-purpose flour, rolled oats, brown sugar, 1/4 cup granulated sugar, cinnamon, and salt.
Step 4: Add the cold, cubed butter to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining. Do not overmix.
Step 5: Evenly sprinkle the crumble topping over the strawberry filling in the baking dish. Place the baking dish on a baking sheet to catch any potential drips.
Step 6: Bake for 35-45 minutes, or until the topping is golden brown and the strawberry filling is bubbly around the edges. The exact baking time may vary based on your oven.
Step 7: Remove from oven and let cool for at least 15-20 minutes before serving. This allows the filling to set. Serve warm with your favorite accompaniments like ice cream or whipped cream.

Notes

For an extra burst of flavor, add a tiny pinch of black pepper to the strawberry filling – it surprisingly enhances the sweetness of the berries! This crumble is best enjoyed warm on the day it's made, but leftovers store well in the refrigerator for up to 3 days. Reheat gently in the oven for best results.
