Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
8 oz cremini mushrooms, sliced
1 tbsp olive oil (plus more if needed)
2 tbsp low-sodium soy sauce
1/4 cup honey
4 cloves garlic, minced
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp cornstarch
2 tbsp water (for cornstarch slurry)
1/4 tsp black pepper
Salt to taste
1 tbsp toasted sesame seeds, for garnish
2 green onions, chopped, for garnish

Instructions

Step 1: Pat chicken dry with paper towels and season with salt and black pepper.
Step 2: In a small bowl, whisk together soy sauce, honey, minced garlic, rice vinegar, sesame oil, and cornstarch until smooth. Set aside.
Step 3: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken pieces in a single layer, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
Step 4: Add sliced mushrooms to the same skillet (add a little more oil if needed). Sauté for 5-7 minutes, stirring occasionally, until tender and lightly browned. The mushrooms will release their liquid and then brown.
Step 5: Return the seared chicken to the skillet with the mushrooms. Give the honey garlic sauce a quick re-whisk, then pour it evenly over the chicken and mushrooms.
Step 6: Bring the mixture to a gentle simmer, stirring constantly, until the sauce thickens and coats the chicken and mushrooms, about 2-3 minutes. Ensure chicken is cooked through.
Step 7: Remove from heat. Garnish with toasted sesame seeds and chopped green onions. Serve immediately over rice or noodles.

Notes

For best results, do not overcrowd the pan when searing the chicken, as this can steam instead of sear the meat. Adjust honey or soy sauce to your preference. This dish reheats well for delicious leftovers!
