3 medium yellow squash, sliced into 1/4-inch rounds
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup freshly grated Parmesan cheese
Fresh parsley for garnish (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Step 2: In a large mixing bowl, combine the sliced yellow squash, olive oil, minced garlic, dried oregano, salt, and pepper. Toss well until every slice is evenly coated.
Step 3: Arrange the squash slices in a single layer on the prepared baking sheet. Ensure they do not overlap to allow for proper roasting and caramelization.
Step 4: Place the baking sheet in the oven and roast for 15 minutes. Halfway through (at about 7-8 minutes), use a spatula to carefully flip the squash slices.
Step 5: Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the squash.
Step 6: Return the pan to the oven for an additional 3-5 minutes, or until the cheese is melted and has formed a golden-brown crust.
Step 7: Garnish with fresh parsley if desired and serve immediately while hot.
Notes
For a crispier texture, use a wire rack set over the baking sheet. This allows air to circulate under the squash.
