Ingredients

1 cup sprouted quinoa (or sprouted grain blend), uncooked
2 cups water or coconut water (for cooking grains)
1 cup full-fat canned coconut milk
1 tablespoon fresh ginger, grated
1-2 tablespoons maple syrup (or honey/agave), to taste
Pinch of sea salt
1/2 cup fresh mixed berries (strawberries, blueberries, raspberries)
1/2 banana, sliced
2 tablespoons chopped almonds or walnuts
1 tablespoon chia seeds or hemp seeds
1 tablespoon toasted coconut flakes (optional)

Instructions

Step 1: Rinse the sprouted quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water (or coconut water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all liquid is absorbed and quinoa is fluffy. Let sit covered for 5 minutes, then fluff with a fork.
Step 2: While the quinoa is cooking, prepare the coconut ginger sauce. In a small saucepan, combine the full-fat coconut milk, grated fresh ginger, maple syrup, and a pinch of sea salt. Heat over low heat, whisking occasionally, until warm and well combined. Do not boil.
Step 3: Prepare your toppings: wash berries, slice banana, chop nuts, and measure out seeds and coconut flakes.
Step 4: Divide the cooked sprouted quinoa evenly between two serving bowls.
Step 5: Pour the warm coconut ginger sauce over the quinoa in each bowl.
Step 6: Artfully arrange the fresh mixed berries, sliced banana, chopped almonds (or walnuts), chia seeds (or hemp seeds), and toasted coconut flakes (if using) on top of each power bowl.

Notes

Feel free to adjust the sweetness level to your liking. For an extra creamy sauce, you can blend the coconut milk and ginger before warming.
