1 ½ cups (300g) granulated sugar
½ cup (110g) light brown sugar, packed
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground ginger
¼ teaspoon ground cloves
1 can (15 oz / 425g) 100% pure pumpkin puree (not pie filling)
2 large eggs, lightly beaten
½ cup (120ml) vegetable oil
1 teaspoon vanilla extract
Optional: 1 cup chocolate chips, chopped nuts, or dried cranberries

Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, light brown sugar, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, and ground cloves.
Step 3: In a separate medium bowl, whisk together the wet ingredients: pumpkin puree, large eggs, vegetable oil, and vanilla extract until thoroughly combined.
Step 4: Pour the wet ingredients into the dry ingredients. With a rubber spatula or wooden spoon, mix until just combined. Do not overmix.
Step 5: If adding any optional mix-ins (chocolate chips, nuts, or dried cranberries), gently fold them into the batter.
Step 6: Pour the batter evenly into your prepared loaf pan.
Step 7: Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
Step 8: Remove the loaf pan from the oven and let the bread cool in the pan for about 10-15 minutes on a wire rack.
Step 9: Carefully invert the bread onto the wire rack to cool completely before slicing.
