14 oz (about 400g) smoked sausage (kielbasa, andouille, or chicken apple), sliced into 1/2-inch thick rounds
1.5 lbs (about 680g) small potatoes (Yukon Gold or red), cut into 1-inch pieces
2 bell peppers (any color), cored, seeded, and cut into 1-inch pieces
1 medium red onion, cut into 1-inch wedges
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
