3 English cucumbers (about 1.5 lbs), or 5-6 Persian cucumbers
4-5 cloves garlic, minced
2 tablespoons light soy sauce (or tamari for gluten-free)
1 tablespoon black vinegar (Chinkiang vinegar is preferred)
1 tablespoon toasted sesame oil
1 teaspoon granulated sugar
1/2 teaspoon salt, plus more for salting cucumbers
1/4 teaspoon red pepper flakes (optional, for heat)
1 tablespoon roasted sesame seeds, for garnish
1 tablespoon fresh cilantro, chopped (optional, for garnish)

Instructions

Step 1: Prepare the cucumbers. Wash and dry the cucumbers. Lay them on a cutting board. Using the flat side of a chef's knife or a rolling pin, firmly smash each cucumber until it cracks and breaks into irregular pieces. Don't overdo it, you want them mostly intact but visibly "smashed".
Step 2: Cut the smashed cucumbers. Once smashed, cut the cucumbers into 1 to 1.5-inch chunks. Place them in a colander.
Step 3: Salt the cucumbers. Sprinkle about 1/2 teaspoon of salt over the cucumber pieces in the colander. Toss gently to coat. Let them sit for 10-15 minutes to draw out excess water. This helps keep the Smashed Cucumber & Garlic Sesame Salad crunchy and prevents it from becoming watery.
Step 4: Drain and dry. After salting, gently squeeze the cucumbers to remove as much liquid as possible. You can use your hands or press them with the back of a spoon. Pat them dry with a paper towel. Transfer the dried cucumbers to a mixing bowl.
Step 5: Prepare the dressing. In a small bowl, combine the minced garlic, soy sauce, black vinegar, toasted sesame oil, sugar, and red pepper flakes (if using). Whisk until the sugar is dissolved and the dressing is well combined.
