2 tbsp olive oil
1 large yellow onion, diced
3 carrots, peeled and diced
3 celery stalks, diced
4 cloves garlic, minced
8 cups vegetable broth
2 (15-ounce) cans chickpeas, rinsed and drained
1 tsp dried thyme
1/2 tsp dried rosemary
2 bay leaves
1 cup wide egg noodles (or gluten-free noodles)
1/2 cup fresh parsley, chopped, for garnish
Salt and black pepper to taste
Optional: a squeeze of lemon juice

Instructions

Step 1: In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 8-10 minutes, or until softened. Add the minced garlic and cook for another minute until fragrant.
Step 2: Transfer the sautéed vegetables to your slow cooker. Add the vegetable broth, rinsed chickpeas, dried thyme, dried rosemary, and bay leaves. Season with salt and pepper to taste.
Step 3: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the vegetables are very tender and the flavors have melded.
Step 4: About 30 minutes before serving, remove the bay leaves. Add the egg noodles to the slow cooker, ensuring they are submerged in the broth. Cover and continue to cook on HIGH for 20-30 minutes, or until the noodles are tender but still have a slight bite (al dente).
Step 5: Stir in the fresh chopped parsley. Taste and adjust seasoning as needed, adding more salt, pepper, or a squeeze of fresh lemon juice for brightness, if desired.
Step 6: Ladle the hearty Slow Cooker Chickpea Noodle Soup into bowls and serve warm.

Notes

For a gluten-free option, ensure to use gluten-free noodles. You can also add a handful of fresh spinach or kale during the last 10 minutes of cooking for extra greens. Leftovers store wonderfully in the fridge for up to 4 days.
