Ingredients

2 medium eggplants (about 1.5 lbs), cut into 1-inch cubes
1 can (15 oz) chickpeas, rinsed and thoroughly dried
3 tablespoons olive oil, divided
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
3 cloves garlic, minced
2-3 tablespoons harissa paste (adjust to your spice preference)
1/2 cup vegetable broth
1 tablespoon fresh lemon juice
1/4 cup fresh cilantro, chopped, plus more for garnish
Optional: Greek yogurt or tahini for serving

Instructions

Step 1: Preheat your oven to 400°F (200°C). If desired, salt the eggplant cubes and let them sit for 20-30 minutes to draw out moisture, then rinse and pat very dry.
Step 2: On a baking sheet, toss the thoroughly dried chickpeas with 1 tablespoon of olive oil, smoked paprika, cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread them in a single layer and roast for 20-25 minutes, tossing halfway, until golden brown and crispy. Set aside.
Step 3: While chickpeas are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet or cast-iron pan over medium-high heat.
Step 4: Add the eggplant cubes to the hot skillet. Cook, stirring occasionally, for 8-10 minutes, until the eggplant is tender and beautifully browned. Do not overcrowd the pan; cook in batches if necessary.
Step 5: Stir in the minced garlic and sauté for another minute until fragrant.
Step 6: Add the harissa paste and vegetable broth to the pan. Mix well, ensuring the eggplant is thoroughly coated. Bring to a gentle simmer.
Step 7: Reduce the heat to low, cover, and let it cook for 5-7 minutes, allowing the flavors to meld and the eggplant to become deeply infused.
Step 8: Remove the skillet from the heat. Stir in the fresh lemon juice and chopped fresh cilantro. Taste and adjust seasoning if needed.
Step 9: Transfer the harissa eggplant to a serving platter or individual bowls. Generously top with the crispy chickpeas. Garnish with extra fresh cilantro or a dollop of Greek yogurt/tahini if desired. Serve immediately.

Notes

For an extra layer of flavor, try finishing the dish with a drizzle of good quality extra virgin olive oil or a sprinkle of toasted sesame seeds. This dish is excellent served with a side of warm pita bread or over fluffy couscous. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, though the chickpeas may lose some of their crispness.
