1 lb large shrimp, peeled, deveined, and cut into 1/2-inch pieces
1 cup fresh lime juice (from about 8-10 limes)
1/2 red onion, finely diced
1 large ripe tomato, seeds removed and finely diced
1/2 English cucumber, finely diced
1-2 jalapeños, seeded and minced (or more to taste)
1/4 cup chopped fresh cilantro
1 clove garlic, minced
2 tbsp extra virgin olive oil
1/2 tsp sea salt, or to taste
1/4 tsp black pepper, or to taste
Optional: 1/2 avocado, diced (for serving)
Optional: tortilla chips or tostadas, for serving

Instructions

Step 1: Prepare the Shrimp. Pat the peeled and deveined shrimp pieces thoroughly dry with paper towels.
Step 2: Marinate the Shrimp. Place the dried shrimp in a non-reactive bowl. Pour the fresh lime juice over the shrimp, ensuring they are completely submerged. Stir gently. Cover and refrigerate for 20-30 minutes, or until the shrimp turn opaque pink, like cooked shrimp. Do not over-marinate.
Step 3: Chop Your Veggies. While the shrimp marinates, finely dice the red onion, tomato, cucumber, and jalapeño. Mince the garlic and chop the cilantro. For a milder onion flavor, rinse the diced red onion under cold water and pat dry.
Step 4: Drain and Combine. Once the shrimp is opaque, drain most of the lime juice from the bowl (you can reserve a small amount if you prefer a very tangy ceviche). Add the drained shrimp to a large mixing bowl with the diced red onion, tomato, cucumber, jalapeño, minced garlic, and chopped cilantro.
Step 5: Gently Mix and Chill. Drizzle with extra virgin olive oil and season with sea salt and black pepper. Gently toss all ingredients together until well combined. Taste and adjust seasonings as needed. Cover and refrigerate for at least 15-30 minutes to allow the flavors to meld beautifully.
