Ingredients
16 oz (450g) package plant-based meatballs
1 large head of broccoli, cut into florets
2 bell peppers (any color, e.g., red and yellow), cored and sliced
2 large carrots, peeled and sliced into rounds or sticks
1/2 cup teriyaki sauce, divided (store-bought or homemade)
1 tbsp sesame seeds, for garnish
2 green onions, thinly sliced, for garnish
Cooked rice or noodles, for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, combine the plant-based meatballs, broccoli florets, sliced bell peppers, and sliced carrots.
Step 3: Pour about half (1/4 cup) of the teriyaki sauce over the mixture. Toss gently to ensure all the meatballs and vegetables are evenly coated.
Step 4: Arrange the coated meatballs and vegetables in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan; if necessary, use two baking sheets.
Step 5: Bake for 20-25 minutes, or until the vegetables are tender-crisp and the meatballs are heated through and slightly browned. Halfway through (around 10-12 minutes), carefully remove the sheet pan and flip the meatballs and veggies to promote even cooking.
Step 6: Once cooked, remove the sheet pan from the oven. Drizzle the remaining teriyaki sauce over the finished dish.
Step 7: Garnish generously with sesame seeds and chopped green onions.
Step 8: Serve hot immediately, over a bed of fluffy rice or noodles.
Notes
For best results, do not overcrowd the baking sheet. If your pan is too small, use two to ensure even roasting and browning of the meatballs and vegetables. Feel free to swap vegetables based on what you have on hand; just adjust cooking times accordingly. Carrots and firmer vegetables may need to be cut smaller or cooked a few minutes longer than softer ones like zucchini or bell peppers.
