Ingredients
1.5 lbs carrots, medium-sized
2 tbsp olive oil
2 tbsp maple syrup (or honey)
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
1/2 tsp sea salt
1/4 tsp black pepper
Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Wash and scrub the carrots. You can peel them if desired, but it's not necessary, especially for organic carrots. Trim off the ends. Cut carrots into uniform 1.5 to 2-inch pieces. If carrots are very thick, halve them lengthwise before chopping.
Step 3: In a large bowl, combine the prepped carrots, olive oil, maple syrup (or honey), minced garlic, chopped fresh rosemary, chopped fresh thyme, sea salt, and black pepper. Toss everything together until the carrots are evenly and thoroughly coated.
Step 4: Spread the seasoned carrots in a single layer on a large baking sheet. Ensure they are not overcrowded; use two baking sheets if necessary to allow for proper caramelization and not steaming.
Step 5: Roast for 20-25 minutes, flipping the carrots halfway through, until they are tender-crisp and have nicely browned, caramelized edges. The exact time will depend on the size of your carrot pieces and your oven.
Step 6: Remove from the oven. Garnish with fresh chopped parsley if desired. Taste and adjust seasoning as needed. Serve immediately and enjoy your delicious roasted carrots recipe!
Notes
For best results, use fresh, medium-sized carrots. Avoid overcrowding the baking sheet to ensure proper caramelization. This roasted carrots recipe is incredibly versatile; feel free to experiment with other herbs or a pinch of spice!
