1 medium head green cabbage
3 tablespoons olive oil
1 teaspoon sea salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 teaspoon garlic powder
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: Remove any loose or damaged outer leaves from the cabbage. Rinse and pat dry. Place the cabbage stem-side down and slice into 3/4 to 1-inch thick rounds, keeping the core intact to hold the slices together. You should get 6-8 'steaks'.
Step 3: Arrange the cabbage steaks in a single layer on the prepared baking sheet, ensuring they do not overlap. Use two baking sheets if necessary to prevent overcrowding.
Step 4: Drizzle both sides of the cabbage steaks generously with olive oil, ensuring even coating.
Step 5: Season both sides of the cabbage steaks liberally with salt, black pepper, and garlic powder.
Step 6: Roast for 20-25 minutes, or until the bottom side is tender and beautifully caramelized.
Step 7: Carefully flip each cabbage steak. Continue roasting for another 15-20 minutes, or until the second side is also golden brown and the cabbage is fork-tender.
Step 8: Remove from the oven and serve immediately. Enjoy your perfectly roasted cabbage steaks!
Notes
For an extra kick, add a pinch of red pepper flakes with the seasonings. A squeeze of fresh lemon juice after roasting brightens the flavor.
