Ingredients
3-4 lb boneless beef chuck roast
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 large yellow onion, chopped into large chunks
4 medium carrots, peeled and cut into 1.5-inch pieces
4 medium potatoes (Yukon Gold or Russet), peeled and cut into 1.5-inch pieces
4 cups beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp cornstarch (optional, for thickening gravy)
2 tbsp cold water (optional, for thickening gravy)
Instructions
Step 1: Pat the beef chuck roast dry with paper towels. Season generously all over with salt, black pepper, and garlic powder.
Step 2: Heat olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Sear the seasoned roast on all sides until deeply browned, about 3-4 minutes per side. This step adds significant flavor.
Step 3: Place the chopped onion, carrots, and potatoes in the bottom of your slow cooker.
Step 4: Transfer the seared chuck roast to the slow cooker, placing it on top of the vegetables.
Step 5: In a bowl, whisk together the beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Pour this mixture over the roast and vegetables in the slow cooker.
Step 6: Cover the slow cooker with its lid and cook on LOW for 8-10 hours, or on HIGH for 4-6 hours, or until the roast is fork-tender and easily pulls apart. Avoid lifting the lid during cooking to retain heat and moisture.
Step 7: Carefully remove the cooked roast from the slow cooker and transfer it to a cutting board. Tent loosely with aluminum foil and let it rest for 10-15 minutes before shredding or slicing.
Step 8: (Optional, for gravy) If you desire a thicker gravy, skim any excess fat from the cooking liquid in the slow cooker. In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry. Stir the slurry into the hot cooking liquid in the slow cooker, switch to high heat, and cook, stirring occasionally, until the gravy thickens to your desired consistency.
Step 9: Shred or slice the rested pot roast. Serve it hot with the cooked vegetables and plenty of the rich gravy.
Notes
For best results, always sear the chuck roast before adding it to the slow cooker; it significantly enhances the flavor and color of the final dish. Don't overcrowd your slow cooker, and ensure your vegetables are cut into substantial pieces to prevent them from becoming mushy.
