1 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
2 cups cooked pulled pork, shredded
1.5 cups chicken broth (low sodium)
1 cup water
1.5 cups penne pasta, uncooked
1 cup BBQ sauce, plus more for serving (your favorite brand)
1/2 cup heavy cream (or milk for a lighter version)
1 cup shredded sharp cheddar cheese
Salt and black pepper to taste
Fresh parsley or cilantro, chopped (for garnish, optional)

Instructions

Step 1: Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add diced onion and sauté for 3-5 minutes until softened and translucent.
Step 2: Add minced garlic to the skillet and cook for another 1 minute until fragrant, being careful not to burn it.
Step 3: Stir in the shredded pulled pork, chicken broth, water, uncooked penne pasta, and 1 cup of BBQ sauce. Season with a pinch of salt and pepper.
Step 4: Bring the mixture to a simmer. Reduce heat to medium-low, cover, and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed. If the liquid absorbs too quickly and pasta is still hard, add another 1/4 cup of water or broth.
Step 5: Remove the skillet from the heat. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the sauce is creamy. Taste and adjust seasoning as needed.
