1 cup strong brewed coffee or 2 shots espresso
1.5 cups milk (dairy or non-dairy)
2 tablespoons pumpkin puree
2 tablespoons maple syrup or sugar (adjust to taste)
1 teaspoon pumpkin pie spice, divided
1/2 teaspoon vanilla extract
Pinch of salt
Whipped cream (optional, for topping)
Extra pinch of pumpkin pie spice or cinnamon (for garnish)

Instructions

Step 1: Brew your coffee or espresso. Set aside.
Step 2: In a small saucepan over medium heat, combine the milk, pumpkin puree, maple syrup (or sugar), 3/4 teaspoon of the pumpkin pie spice, vanilla extract, and a pinch of salt. Whisk continuously until the mixture is hot and steaming, but not boiling.
Step 3: Remove the saucepan from the heat. You can either use an immersion blender to froth the milk directly in the pan, or carefully transfer the mixture to a regular blender and blend until frothy. Be cautious when blending hot liquids.
Step 4: Divide the brewed coffee or espresso between two mugs.
Step 5: Pour the frothed pumpkin milk mixture over the coffee in each mug.
