Ingredients
1 cup (240ml) milk of choice (dairy or non-dairy)
1/4 cup (60g) pumpkin puree (100% pumpkin, not pie filling)
1 scoop (25-30g) vanilla protein powder (whey or plant-based)
1/2 - 1 tsp pumpkin pie spice, to taste
1/2 tsp vanilla extract
1-2 tsp sweetener of choice (maple syrup, stevia, erythritol, honey), or to taste
Optional: whipped cream, extra cinnamon for garnish
Instructions
Step 1: In a small saucepan, combine the milk, pumpkin puree, pumpkin pie spice, and your chosen liquid sweetener (if using). Heat over medium-low heat, stirring frequently, until the mixture is warm and steaming, but do not let it boil.
Step 2: Remove the saucepan from the heat. Stir in the vanilla extract. If using a granulated sweetener, add it now and stir until fully dissolved.
Step 3: Carefully transfer the warm pumpkin mixture to a blender. Add the scoop of vanilla protein powder.
Step 4: Secure the blender lid and blend on high speed for 30-60 seconds, or until the latte is completely smooth and frothy. (If blending hot liquids, be cautious and use a secure lid, or allow steam to vent if your blender has this feature).
Step 5: Pour the Pumpkin Protein Latte into your favorite mug.
Step 6: Garnish with whipped cream and an extra sprinkle of pumpkin pie spice or cinnamon, if desired. Serve immediately and enjoy your delicious Pumpkin Protein Latte!
Notes
Feel free to adjust the amount of pumpkin puree and spices to suit your taste. For an extra rich latte, use full-fat milk or add a tablespoon of nut butter to the blender. Store any leftover pumpkin puree in an airtight container in the fridge for up to 5-7 days for your next Pumpkin Protein Latte!
