Ingredients
2 oz (60ml) Tequila Blanco
1 oz (30ml) Prickly Pear Nectar or Syrup (see notes for homemade)
0.75 oz (22ml) Fresh Lime Juice
0.5 oz (15ml) Agave Nectar or Simple Syrup (adjust to taste, optional)
Ice
Coarse sea salt or margarita salt (for rim, optional)
Lime wedge or prickly pear slice (for garnish)
Instructions
Step 1: Prepare your glass. If desired, moisten the rim of a margarita or rocks glass with a lime wedge, then invert it onto a plate of coarse salt to coat. Set aside.
Step 2: Combine ingredients. In a cocktail shaker, add the tequila blanco, prickly pear nectar (or syrup), fresh lime juice, and agave nectar (if using).
Step 3: Add ice and shake. Fill the shaker with ice. Secure the lid tightly and shake vigorously for about 15-20 seconds until the shaker is thoroughly chilled.
Step 4: Strain and serve. Fill your prepared glass with fresh ice. Strain the margarita mixture from the shaker into the glass.
Step 5: Garnish. Garnish with a lime wedge or a thin slice of fresh prickly pear, and serve immediately. Enjoy your vibrant Prickly Pear Margarita!
Notes
To make Prickly Pear Syrup: Combine 1 cup prickly pear puree (from about 3-4 peeled and blended prickly pears, strained) with 1 cup granulated sugar and 1/2 cup water in a saucepan. Heat over medium heat, stirring until sugar dissolves. Simmer for 5-7 minutes, then cool completely. Store in an airtight container in the refrigerator for up to 2 weeks.
