Ingredients

4 bone-in or boneless pork chops (about 1-inch thick)
1/2 cup honey
1/4 cup low-sodium soy sauce
4 cloves garlic, minced
2 tablespoons apple cider vinegar
1 tablespoon brown sugar (packed)
1 tablespoon cornstarch (plus optional 1 tbsp for thickening)
1/2 teaspoon black pepper
Salt to taste
2 tablespoons cold water (for thickening, if needed)
Fresh parsley or green onions, chopped (for garnish, optional)

Instructions

Step 1: Lightly spray the inside of your slow cooker with non-stick spray or line with a slow cooker liner.
Step 2: In a medium bowl, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, brown sugar, 1 tablespoon cornstarch, and black pepper until well combined.
Step 3: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
Step 4: Place the seasoned pork chops in a single layer at the bottom of the prepared slow cooker. Pour the honey garlic sauce evenly over the pork chops.
Step 5: Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, or until the pork chops are tender and cooked through (internal temperature reaches 145°F/63°C).
Step 6: If you prefer a thicker sauce, carefully remove the cooked pork chops and set aside. In a small bowl, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the sauce in the slow cooker. Cook on HIGH for another 15-20 minutes, stirring occasionally, until the sauce has thickened.
Step 7: Return the pork chops to the thickened sauce to coat. Garnish with fresh chopped parsley or green onions, if desired. Serve immediately.

Notes

For best results, use thicker, bone-in pork chops to prevent drying out. You can sear the pork chops for a few minutes per side before adding them to the slow cooker for an extra layer of flavor, but this step is optional for truly easy pork chop recipes crockpot.
