Ingredients
1 cup fresh strawberries, hulled
1/2 cup fresh blueberries
1/2 cup fresh raspberries
2 cups Greek yogurt (plain or vanilla)
3 tablespoons honey or maple syrup, divided
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
Instructions
Step 1: In a blender, combine the strawberries, blueberries, raspberries, lemon juice, and 1 tablespoon of honey. Blend until smooth.
Step 2: In a medium mixing bowl, whisk together the Greek yogurt, vanilla extract, and the remaining 2 tablespoons of honey until well combined.
Step 3: Taste both mixtures. If you prefer a sweeter treat, add an extra teaspoon of honey to the yogurt or the fruit purée.
Step 4: Spoon a tablespoon of the yogurt mixture into the bottom of each popsicle mold. Follow with a tablespoon of the berry purée.
Step 5: Continue alternating layers until the molds are nearly full, leaving a small gap at the top for expansion. Use a skewer to gently swirl the layers together.
Step 6: Insert popsicle sticks and freeze for at least 4-6 hours, or until completely solid. To unmold, run the outside of the molds under warm water for 10 seconds.
Notes
For a dairy-free version, use coconut milk yogurt. Ensure the fruit is fully ripe for the best natural sweetness.
