Ingredients
2 cups (approx. 450g) full-fat cottage cheese (4% milkfat)
1/2 cup shelled, unsalted pistachios, divided
1/4 cup honey or maple syrup (adjust to taste)
1 teaspoon pure vanilla extract
Pinch of salt (optional, if you like a sweet-salty balance)
Instructions
Step 1: Prepare your pistachios. Roughly chop half of the pistachios (about 1/4 cup); these will be folded in later for texture. Finely chop or grind the remaining half (about 1/4 cup); these will be blended into the base for flavor.
Step 2: In a high-speed blender, combine the full-fat cottage cheese, honey or maple syrup, vanilla extract, and the finely chopped pistachios. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed to ensure no cottage cheese lumps remain. This should take about 2-3 minutes.
Step 3: Taste the blended ice cream base. Adjust sweetness if necessary, remembering that flavors will be slightly less pronounced once frozen. If desired, add a tiny pinch of salt to enhance the flavors.
Step 4: Pour the smooth Pistachio Cottage Cheese Ice Cream base into an airtight container and refrigerate for at least 4 hours, or preferably overnight, to ensure it is thoroughly chilled. A well-chilled base yields a creamier ice cream.
Step 5: Once the base is chilled, prepare your ice cream maker according to the manufacturer's instructions (ensure the bowl is pre-frozen). Pour the chilled mixture into the ice cream maker.
Step 6: Churn the mixture for 20-30 minutes, or until it reaches the consistency of soft-serve ice cream. The time may vary based on your ice cream maker model.
Step 7: During the last 5 minutes of churning, add the reserved roughly chopped pistachios to the ice cream maker. This will distribute them evenly throughout the ice cream, providing a delightful crunch.
Step 8: Transfer the soft-serve Pistachio Cottage Cheese Ice Cream to a freezer-safe container. Press a piece of parchment paper or plastic wrap directly onto the surface to prevent ice crystals. Freeze for at least 4-6 hours, or until firm, before serving. For best results, let it sit at room temperature for 5-10 minutes before scooping.
Notes
For the best texture, use full-fat cottage cheese and ensure your ice cream maker's bowl is frozen solid for at least 24 hours. The initial blend is key to achieving a smooth, lump-free base. If you don't have an ice cream maker, you can try a 'no-churn' method by freezing the mixture in a shallow pan and stirring it every 30-45 minutes for 2-3 hours until firm.
